EASY SMOKY BBQ PULLED PORK TACOS
Most people don't know this, but by day, I am an educator, which means during this time of year sometimes I leave when its dark and get home when it's dark again. From being in classrooms to attending events and trying to get to the gym on a daily basis, by the time my feet get to my front door, I'm usually hungry and ready to eat ASAP. So you can imagine, it was easy for me to fall in love with Pioneer's Smoky BBQ Pulled Pork Seasoning Mix, which is a part of their Comfort Meal Solutions Line.
I mean it's seriously delicious and you only need THREE INGREDIENTS to make the sauce! This can be used a plethora of ways and has so much flavor! It's truly a great affordable choice. Instead of buying all of the separate spices needed, which can be costly, Pioneer's Comfort Meal Solutions provide perfectly portioned packs of the seasonings you need to create chef-inspired, tasty meals!
INGREDIENTS NEEDED FOR TACOS:
1 Packet of Pioneer's Smoky BBQ Pulled Pork Seasoning Mix
1/2 Cup of Ketchup
1/4 Cup Water
1lb of Fully Cooked Pulled Pork - Most grocers will sell their version of this and it makes everything so EASY! All you have to do is warm it up, pull a part the meat and add your sauce! LOVE THIS OPTION (You can also make your own!)
Tortillas
Bundle of Fresh Cilantro
Feta Crumbles
Pickled Onions
A Lime
CAN I USE A PLANT-BASED OPTION INSTEAD OF PULLED PORK?
Of course! As many of my followers know, I love to flex my food options and I will scream it from the rooftops, because sometimes you just want something different. I highly recommend using jack fruit if you are looking for a plant-based alternative. It can mimic the texture of pulled pork and soaks in flavor, which is what you want out of this recipe! Although simple, Pioneer has really cracked the code on how to make flavors pop while saving you time in the kitchen.
SMOKY PULLED PORK TACOS
PREP TIME: 10 Minutes COOK TIME: 15 Minutes to 1 hour TOTAL: 25 Minutes to 1 hour & 1o minutes
INSTRUCTIONS 1. Prep your pulled pork - for me I used an already cooked pulled pork from Kroger and warmed it up in a pot on low heat with 3 to 4 tbsp of water as I was making the sauce
2. Make your Smoky BBQ Sauce - Combine 1/4 cup water and 1/2 cup ketchup in a bowl and mix together until smooth
3. Add your sauce to your pot, mix and pull pork apart
4. Continue to let simmer. I simmered mine anywhere from 15 to 20 minutes but an hour is recommended. The longer you merge the two, the deeper the flavor, for me, this is intended to be a quick and tasty meal, so once it's hot and well combined, I'M READY TO EAT! LOL (Pioneer's Cooking Instructions are also shown below)
5. Prep your tortillas on a plate
6. Add your pulled pork
7. Dress it all up with your toppings - Cilantro, Pickled Onions and Feta Crumbles, Lime Juice - I really like Avocado on this as well
8. That's it! Now Enjoy
I can not tell you how quickly I hate two of these tacos, I actually had to stop myself. The sauce is SO GOOD, and taste like something my dad would make. This is a great recipe for a quick meal but also for gatherings and of course game day! The comforting spice mix with the light and fresh toppings make for the perfect combo that you won't be able to get enough of.
